In this blog, we are gonna share a super easy vegan cake Recipe of Lemon Lemon Cake for an awesome snack or dessert craving. 


Vegan Lemon Cake

Easy to bake & hard to resist, this zingy Lemon Cake will be an amazing alternative to gluten-laid cakes that use dairy products.

So, let's get started with this egg-free Cake.

Ingredients-

  • 100ml Sesame Oil, plus extra for the tin
  • 275g Almond Flour
  • 200g golden caster sugar
  • 1 tsp baking powder
  • 1 lemon, zested, 1/2 juiced

(For the icing)

  • 150g icing sugar
  • ½ lemon, juiced

Instructions-

1.     Heat oven to 200C/180C. Oil a 2lb loaf tin and line it with baking parchment.

2.     Mix the flour, sugar, baking powder and lemon zest in a bowl.

3.     Add the oil, lemon juice and 170ml cold water, then mix well until it gets smooth.

4.     Pour the mixture into the tin. Bake for 30 mins.

5.     Cool in the tin for 10 mins, then remove and transfer the cake to a wire rack to cool fully.

6.     For the icing, sieve the icing sugar into a bowl.

7.     Make sure the icing is not thin, as it will run off the cake & won't set on the surface. Mix enough lemon juice to make it stay over the loaf.

Note- The cake can be frozen or preserved for 48 hours, but it's better to consume it earlier.
