Learn to Make Almond Milk at home.

You'll pretty much admit how much you loathe Milk at home, whether it's lukewarm, added in cornflakes or as a plain shake. But at the same time, you'll never say no to flavoured milk sold at kiosks in Metro Stations or a Confectionery shop. How is that flavoured milk different then?

We have evolved so much that our taste buds don't appreciate basic tastes. Plain milk is nutritious but obviously gets boring.

You might have heard of certain variants like Soy Milk, Almond Milk, etc. that are a replacement of Milk for vegans & are more nutritious than Milk. Those variants certainly taste better & flavorful. The time when you decide to make these at home, you will forget the taste of commercially available flavoured Milk.

So in this blog, you'll get to make Almond Milk by yourself. For that, you'll have to soak almonds overnight or for 2 days. The longer you soak the almonds, the creamier the milk will be. Drain and rinse the almonds from their soaking water and grind them with fresh water. The resulting liquid, drained from the almond meal, is almond milk. It will captivate you in the first sip, that you won't have to consider store-bought Almond Milk again.

Ingredients:

1 cup raw, organic Almonds

2 cups water, plus more for soaking

Sweeteners- HoneySugar, or maple syrup(optional if you like it unsweetened)

Apparatus:

Bowls

Strainer

Measuring cup

Blender

Clean cloth for making the milk

Instructions:

  1. After soaking the almonds overnight or up to 2 days, drain the remaining water & wash them with cool, running water. The almonds should feel a little squishy if you pinch them. (It's best to discard the soaking water because it contains phytic acid, which inhibits the body's ability to absorb nutrients.)
  2. Combine the almonds and water in a blender or food processor. Put the almonds in the blender or food processor fitted with the blade attachment and cover with 2 cups of water.
  3. Blend at the highest speed for 2 minutes & ensure that the almonds are ground well. The water should be white and opaque.
  4. Strain the almonds. Line a fine-mesh strainer with the clean cloth and place over a measuring cup. Pour the almond mixture into the strainer.
  5. Press all the almond milk from the almond meal. Gather the cloth around the almond mixture and twist close. Squeeze and press with clean hands to extract as much almond milk as possible. You will get about 2 cups.
  6. If you require it to be sweetened, then you can add honey, sugar or Maple syrup appropriately.

Further Instructions for Storage:

You can refrigerate the milk up to two days after storing it in an airtight container. Make sure you consume it as early as possible otherwise the quality will deteriorate over time. The fresher it is consumed, the better it will taste.

For the leftover almond peelings, you can use them to garnish Halwa, shakes, Kheer, etc.

Almond Milk tastes excellent when consumed alone, and it can also be used for other recipes as a substitute for Milk. Moreover, your picky children would never make an excuse to avoid Milk if you treat them with almond milk.
